So first off why Saltas? Founded by the team behind COIN; Oliver Lawson & Chloe Greenwood, Romeo Salta was a pioneer of the New York food scene in the early ‘50’s- ‘90’s & one of the first to introduce fine Italian cuisine to restaurants. He was also Oliver’s great uncle.

Romeo was quite frankly a legend. After his fathers death in an Italian Navy submarine in 1910 when Romeo was 6, he was raised in a state run institution in Florence. As soon as he could he joined the submarine service, after being discharged and a stint as a cabin steward & kitchen boy (where he learned to cook). In1929 Romeo jumped ship and entered the United States as an illegal immigrant with no money. His passport into the restaurant world was through a business card given to him by a passenger who ran the Central Park Casino.

After being hired as a waiter Romeo went onto work in various capacities at the Pierre Hotel, the Waldorf Astoria and the St. Moritz.

In 1953 Romeo opened his namesake restaurant ‘Romeo Salta, on West 56th Street and was one of the first to offer elegant Northern Italian cooking and was revered by theatre & music personalities.

Now Saltas, bringing family history & charm through our New York style Italian sandwiches, soft serve, coffee & beer.
